Roasted Pork with Sauce

Ingredients

pork shoulder (cut into 2 pieces) 1450 g (1 pound)
hoisin sauce 2 tbsp
fermented black bean sauce 2 tsp
sesame paste 1 tbsp
light soy sauce 1 tbsp
sugar 1 tbsp
cognac or rose plum wine 2 tsp
salt 1/4 tsp
minced garlic 1 tsp
five-spice powder 1/8 tsp
oil (for greasing pan bottom) 2 tsp
sesame oil (mixed with honey for glazing) 2 tsp
honey (mixed with sesame oil for glazing) 4 tsp

Instructions

1

Preparation

Mix all marinade ingredients in a large bowl until smooth. Cut the pork shoulder into 2 pieces, add to the marinade, refrigerate overnight, flip the meat once halfway through.

2

Cooking

Preheat the grill pan over high heat for 5 minutes. Add oil and spread evenly over the pan bottom. Place the two pieces of meat on opposite sides of the pan. Sear over high heat for 2 minutes, flip, then sear for another 2 minutes over high heat. Continue to cook over medium heat (70% power) for 4 minutes, covering loosely with a small plate or kitchen paper to prevent oil splashes while heating.

3

Finishing

Remove the covering, cook over high heat for 4 minutes to dry out the juices. Brush with the sesame oil and honey mixture, then heat for 1 more minute. Slice the meat, drizzle with sauce, and serve.
