Rose Dou Cake
A traditional Jiangsu pastry shaped like a small dou, the vessel once used for measuring rice. Soft and sweet, with a delicate rose fragrance.
Ingredients
Instructions
Step 1
Wash the short-grain rice clean, drain the water, and let it rest for about two hours. Once the rice grains can be crushed between your fingers but are not damp, grind them into powder, then sift through a 50-mesh sieve.
Step 2
Place the rice flour into a mixing bowl, add 550 g of water and stir until evenly combined, then sift through a 30-mesh sieve to obtain about 2.65 kg of snowflake-like dou cake flour.
Step 3
Wash the glutinous rice clean, drain, and grind into powder. Sift through a fine sieve to obtain about 550 g of glutinous rice flour.
Step 4
Add 750 g of fine white sugar to the glutinous rice flour and stir well. Mix in 5 g of red rice flour and continue stirring. When the red color appears, add the rose petals and stir to form the filling.
Step 5
Cut 400 g of pork back fat into 200 small cubes, each weighing about 2 g. Add 250 g of fine white sugar and marinate for two to three days to create pork fat cubes.
Step 6
Prepare three round wooden molds, larger at the top and smaller at the bottom, with a square hopper-shaped opening connecting the top and bottom.
Step 7
Take one mold and place an aluminum cross-shaped base plate at the bottom. Use a copper thin-blade spatula to scoop 11 g of dou cake flour into the mold, spreading the flour to the sides and bottom, and shaping the center into a bowl-shaped hollow.
Step 8
Place 2 pork fat cubes in the center of the mold, then add 15 g of filling on top of the pork fat. Scoop about 20 g of flour to cover, and use a steel blade to press and smooth along the edges of the mold.
Step 9
Place the mold and cake into a steamer and steam over high heat for 30 to 40 minutes.
Step 10
Once steamed, remove and cool. Take out the dou cake, remove the mold and aluminum base plate to obtain the finished product.
