Ingredients

young hen (slaughtered and cleaned) 1 (about 700-800 g)
rose sugar 1 kg
rock sugar 1 kg
rose wine 750 g
light soy sauce 15 kg
cinnamon 150 g
licorice 150 g
cardamom 25 g
bay leaves 25 g
apple 100 g
star anise 25 g

Instructions

1

Make the sauce vat

Wrap the above spices in a thin cloth, place them in a sauce vat, and simmer over low heat until the fragrance is released. Add the wine and sugar to form the soy sauce wine-sugar marinade. You may add additional soy sauce, but never add water.

2

Smoke the chicken

Place the cleaned chicken into the rose soy sauce vat and smoke-cook it until the chicken is fall-off-the-bone tender.

3

Shred the chicken

Shred the chicken meat off the bones and cut it into chopstick-stick-shaped strips.

4

Plate the dish

Place some of the chicken bones at the bottom of the plate as a base, layer the shredded chicken meat on top, and drizzle a small amount of the original sauce over it to finish. When serving, you may garnish the edges with bok choy hearts.
