Sakura Mochi (Kansai Style)

A Kansai-style sakura mochi made with domyoji flour, filled with sweet bean paste, and wrapped in a salted cherry leaf.

Sakura Mochi (Kansai Style)

Ingredients

Domyoji flour (similar to glutinous rice flour) 150 g
Water 180 g
Salted cherry leaves 10 slices
Bean paste filling (refer to page 35) 200 g
Japanese superfine sugar 40 g
Salt 1 pinch
Red food coloring powder a pinch

Prepare the flour and leaves

Wash and drain the Domyoji flour, then add water and let stand for 1 hour. Remove the saltiness from the salted cherry leaves and pat dry. Divide the bean paste filling into 10 equal portions and roll into balls.

Heating and mixing

Cover the Domyoji flour with plastic wrap and microwave at 500W for 5 minutes. Add sugar, salt, and red food coloring and mix. If the dough is too firm, heat for another 1-2 minutes.

Wrapping and shaping

Divide the dough into 10 equal portions, flatten each piece, wrap around a portion of the bean paste filling, and shape into ovals. Roll each piece in a salted cherry leaf to wrap.
