Salt-and-Pepper Potato Strips

Salt-and-Pepper Potato Strips

Ingredients

potatoes (peeled, washed, cut into strips) 250 g
cornstarch (mixed with water into a slurry) 75 g
all-purpose flour (mixed with water into a batter) 25 g
vegetable oil (about 70 g actually used; heated to medium-high, roughly 175 °C / 350 °F) 500 g
Sichuan pepper salt (for sprinkling on top) 8 g
baking soda (mixed with water into a slurry) 1 g

Step 1

Peel and wash the potatoes, then cut them into strips about 1 cm × 1 cm × 4 cm. In a separate bowl, combine the cornstarch, flour, and baking soda with a little water and stir until it forms a smooth, lump-free batter.

Toss the potato strips in the batter until they are evenly coated. Carefully lower them into the oil heated to about medium-high (roughly 175 °C / 350 °F) and fry until golden and crisp. Remove with a slotted spoon, drain off the oil well, transfer to a serving plate, sprinkle generously with Sichuan pepper salt, and serve hot.
