Salted Egg Yolk Stir-fried Bitter Melon

Salted Egg Yolk Stir-fried Bitter Melon

Ingredients

bitter melon 1 piece
salted duck egg yolks 2 pieces

Prepare all the ingredients.

Crush the garlic cloves and crumble the salted egg yolks, set aside.

Wash the bitter melon, cut it in half lengthwise, scoop out the seeds and inner pulp, then slice it into thin pieces.

Add sugar, water, and a little rapeseed oil to the pot, bring to a boil, then add the bitter melon.

When the bitter melon changes color after blanching, remove it quickly, rinse under cold water, and set aside.

Pour rapeseed oil back into the pot, stir-fry the scallions and garlic until fragrant, then add the crumbled egg yolks.

Stir-fry thoroughly until the mixture becomes sandy and thick.
