Salted Meat Soup with Crucian Carp

Ingredients

salted meat soup 1 small bowl
crucian carp (gutted, scaled and cleaned) 1
whole scallion and ginger a pinch
whole Sichuan peppercorns 6
lard for frying fish (amount not specified in original) to taste

Gut the crucian carp, remove scales and innards, wash clean, then briefly pan-fry in lard (do not brown).

Add the salted meat soup, whole scallion and ginger, and whole Sichuan peppercorns to the pot, and bring to a boil together with the fish until the fish is cooked through and the liquid has reduced. Discard the scallion, ginger, and peppercorns before serving.
