Sauce-Braised Duck Pieces
A Sichuan dish: pieces of roasted duck are stir-fried to drive off moisture, then tossed with bamboo shoot pieces and sweet bean sauce until the sauce reduces. The finished dish has a glossy reddish-brown color and a crisp, fragrant finish.

300g
Bamboo shoot pieces
40g
Sweet bean sauce
20g
Shaoxing wine
3g
Minced garlic
3g
Ginger
20g
Sesame oil (added at the end)
3g
Chicken stock
1 tbsp
Sugar
a pinch
Scallion segments
30g
Instructions
1
Quick-fry the duck pieces
Cut the roast duck into rectangular pieces about 1 inch long and 1/2 inch wide. Place them in a wok over high heat with oil and stir-fry to drive off the moisture, then remove and set aside.
2
Stir-fry with sauce and reduce
Add the bamboo shoot pieces to the wok, then stir in the sweet bean sauce, wine, ginger, and minced garlic. Return the duck pieces to the pan, add the scallion segments, sugar, and chicken stock, and toss a few more times until the liquid has reduced. Drizzle in the sesame oil just before serving.
