These aromatic breadsticks bridge the gap between a soft dinner roll and a savory pastry. The key is kneading the dough until it achieves a thin, windowpane-like texture, which ensures the final crumb is tender yet chewy.

Ingredients

High-gluten or Bread Flour 250g
Whole Milk 130ml
Unsalted Butter, softened 25g
Fine Sugar 20g
Instant Yeast 3g
Salt 3g
Fresh Scallions, finely chopped 2 stalks
Shredded Mozzarella or Cheddar Cheese 50g
Egg Yolk 1 (for wash)

Mix the Initial Dough

Sift the flour into a bowl. Add the sugar, salt, yeast, and milk. Combine the ingredients in a bread machine or stand mixer and knead until a rough dough forms. Adjust the liquid slightly if necessary based on the flour's absorption.

Incorporate Butter and Scallions

Once the dough reaches a basic consistency, add the softened butter. Continue kneading until the dough passes the windowpane test (it stretches without tearing). Finally, mix in the chopped fresh scallions until evenly distributed.

First Proof

Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place (around 28°C) for about 1 hour, or until it has doubled in size.

Shape the Breadsticks

Punch down the risen dough to degas it. Divide the dough into equal portions and roll each piece into a long, thin strip. Arrange the strips on a baking sheet lined with parchment paper, leaving space between them for expansion.

Second Proof and Bake

Cover the shaped sticks and let them rest for another 20 minutes until puffy. Brush the tops with beaten egg yolk and sprinkle generously with shredded cheese. Bake in a preheated oven at 180°C (350°F) for approximately 20-25 minutes, or until the cheese is melted and the tops are golden brown.
