Scallion-Braised Tofu

Story

This dish comes together in under 30 minutes and relies on simple technique: get a nice golden sear on the tofu first, then build flavor with aromatics. The star anise adds subtle depth without overwhelming the dish.

Ingredients

firm tofu (400g block) 1 block
scallions 4-5 stalks
vegetable oil 3 tablespoons
star anise 1 piece
light soy sauce 2 tablespoons
oyster sauce 1 tablespoon
granulated sugar 1 teaspoon
ground white pepper a pinch
salt to taste
hot water or meat broth 1 cup

Prep the scallions and tofu

Cut the scallions into 2-inch segments, then slice each segment in half lengthwise. Cut the tofu into rectangles about 1/2-inch thick. Pat the tofu pieces dry with a paper towel.

Sear the tofu

Heat 1 tablespoon of oil in a non-stick pan over medium heat. Sprinkle a little salt on the tofu, then carefully place it in the pan. Cook for 3-4 minutes per side until golden and slightly crisp. Transfer to a plate and set aside.

Build the aromatics

Add the remaining oil to the same pan. Drop in the star anise and let it sizzle for 30 seconds until fragrant. Add the scallions and stir-fry for 2-3 minutes until they turn golden and caramelized at the edges.

Braise the tofu

Pour in the hot water or meat broth. Add the soy sauce, oyster sauce, sugar, and white pepper. Stir gently to combine, then nestle the seared tofu pieces into the liquid. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 5 minutes. The tofu will absorb all those savory flavors.

Finish and serve

Taste the braising liquid and adjust seasoning with more salt if needed. Serve hot, spooning the scallions and sauce over the tofu. Great with steamed rice.
