Scallion Oil Bitter Melon

Ingredients

bitter melon 500 g
sesame oil 2 tbsp
scallion 50 g
Sichuan peppercorns 10
salt to taste
MSG to taste

Step 1

Remove the stem end of the bitter melon, halve it lengthwise, scoop out the seeds and pith, and cut diagonally into slices. Blanch the slices in boiling water until just cooked through, then lift out and drain thoroughly. Transfer to a plate, sprinkle with an appropriate amount of fine salt while still hot, toss to coat evenly, drain off any liquid, and set aside.

Finely mince the scallions. Place a bowl with an appropriate amount of salt at the bottom, then pile the minced scallions on top.

Step 3

Heat the sesame oil to about 40% hot, add the Sichuan peppercorns and fry until fragrant, then discard the peppercorns. Reheat the sesame oil to about 70% hot and immediately pour it over the minced scallions. Stir well, add the bitter melon slices, season with MSG to taste, toss to combine evenly, and plate to serve.
