Scallion Oil Poached Chicken
A classic Cantonese white-cut chicken featuring tender meat and aromatic scallion oil, served with mustard sauce.
Ingredients
young tender hen
1 (about 0.8-1.2 kg)
scallion (cut into fine strips)
120 g
ginger (cut into fine strips)
40 g
vegetable oil
120 g
white pepper
a pinch
salt
15 g
MSG
8 g
Instructions
1
Poach the Chicken
Poach the chicken in a pot of boiling water until just cooked (avoid overcooking; about 15 minutes is generally enough). Remove and cut into pieces (keeping the original chicken shape), arranging the head and wings.
2
Cut into Strips
Cut the scallions and ginger into fine strips.
3
Pour Scallion Oil
Pour the oil into a wok and heat over high heat until hot. Sprinkle the ginger strips over the chicken, then ladle the hot oil over it, and finally add the scallion strips on top.
4
Pour Sauce
Add 200 g of broth to the wok and bring to a simmer over low heat, then add the white pepper, salt, and MSG and cook down into a sauce. Pour it over the chicken and serve.
