Sea Cucumber and Chicken Pot

Sea cucumber is gently simmered with ginger and scallions to remove any off-odors, while the chicken is briefly flash-fried in hot oil. The two are then combined in a clay pot, water is added, and the dish is braised together with seasonings until done.

Sea Cucumber and Chicken Pot

Ingredients

Soaked sea cucumber (washed, simmered, and cut into pieces) 960 g
Chicken (washed and chopped into pieces) 1/2
Ginger (some for simmering the sea cucumber, some for stir-frying) 6 slices
Scallions (some for simmering the sea cucumber) 4
Garlic chives 2
Chinese liquor 1/2 tsp
Water 2 bowls (for simmering the sea cucumber) + 2 bowls (for the pot)
Dark soy sauce (for seasoning) to taste
MSG (for seasoning) to taste
Salt (for seasoning) to taste
Sugar (for seasoning) to taste

Prepare the sea cucumber

Wash the soaked sea cucumber thoroughly in clean water. Start the wok with some ginger and scallions, pour in two bowls of water, add the sea cucumber and simmer for 20 minutes. Remove the sea cucumber, cut it into pieces, and set aside.

Prepare the chicken and braise

Wash the chicken and chop it into pieces. Add seasoning and mix well, then poach in hot oil and remove. Pour off the oil, start the wok with ginger and garlic chives, add the chicken pieces and stir-fry. Splash in the Chinese liquor, pour in two bowls of water, and adjust the seasoning to taste. Transfer everything to an earthenware pot and add the sea cucumber.
