Ingredients

puff pastry (rolled flat) 300 g
shrimp (blanched until cooked, cooled in ice water, drained) 100 g
fish fillet (blanched until cooked, cooled in ice water, drained) 60 g
squid rings (blanched until cooked, cooled in ice water, drained) 60 g
mayonnaise 60 g
white pepper powder a pinch
cilantro a pinch
salt 1/2 tsp
egg yolks (for egg wash) 2
water (for egg wash) to taste

Instructions

1

Cutting the Pastry

Roll out the puff pastry and cut out 12 rounds with a round cutter. Take 6 of them and press a smaller round cutter in the middle to remove the center of the pastry, creating a ring (tire) shape.

2

Assembling the Pastry

Brush egg wash around the edges of the 6 solid pastry rounds, then place the ring-shaped pastry on top. Refrigerate to rest for about 15 minutes.

3

Baking the Pastry

Remove from the refrigerator (Step 2), brush the remaining egg wash around the edges again, then bake in an oven at 200/200°C for about 20 minutes. Remove and set aside.

4

Making the Seafood Filling

Blanch the shrimp, fish fillets, and squid rings in boiling water until cooked. Remove and cool in ice water, then drain. Mix with mayonnaise, salt, white pepper, and cilantro. Finally, place the mixture into the center of the baked pastry.
