Seafood Sauce (Method 1)

Ingredients

shrimp (select, wash, drain, and mince) to taste
crab (select, wash, drain, and mince) to taste
fish (select, wash, drain, and mince) to taste
salt (preferably coarse salt) to taste

Instructions

1

Preparing the seafood

First, sort, wash, and drain the shrimp, crab, and fish separately.

2

Mincing

Mince each type separately until the texture is slightly coarser than a meat paste.

3

Bottling and salting

After mincing, place the minced seafood into a container (a jar or wide-mouth glass bottle, sterilized with boiling water and drained before use). Do not fill the sauce too full. Add the salt and stir until evenly mixed.

4

Fermenting

Seal the opening with cheesecloth and place in a sunny spot for natural fermentation. Open the cheesecloth once a day and stir with a dry, sterilized rolling pin.
