Story

These crispy crackers bring together the savory umami of Japanese nori with the classic soda cracker texture. The dough comes together quickly and the resting time is essential for achieving that perfect crunch.

Ingredients

all-purpose flour 2 cups
baking soda 1/2 teaspoon
salt 1/2 teaspoon
cold unsalted butter, cubed 4 tablespoons
warm water 3/4 cup
dried nori sheets, finely chopped 2 sheets

Mix the dry base

In a large bowl, whisk together flour, baking soda, and salt. Add the cold butter cubes and work them in with your fingertips or a pastry cutter until the mixture resembles coarse crumbs.

Form the dough

Pour in the warm water and stir with a fork until a shaggy dough forms. Turn out onto a clean surface and knead for a few minutes until smooth. Fold in the chopped nori and knead briefly to distribute evenly. Cover with plastic wrap and let rest for 20 minutes.

Roll and cut

Punch down the dough to release air bubbles. Roll out on a floured surface to about 1/8 inch thick. Use a knife or pizza cutter to cut into small rectangles or squares. Transfer to a parchment-lined baking sheet.

Add the signature dots

Use a fork to prick each cracker with rows of small holes. This prevents them from puffing up and gives them that classic cracker appearance. Let them rest for 10 minutes while the oven preheats.

Bake until golden

Preheat oven to 350°F (180°C). Bake for 12-15 minutes until the edges turn golden brown and the crackers are crisp. Cool completely on the baking sheet before serving.
