Sesame Mandarin Fish
A traditional Zhejiang banquet dish in which mandarin fish fillets are coated with sesame seeds and fried until golden, yielding a crisp exterior and tender, flavorful flesh.

Prepare the fish
Scale and gut the mandarin fish, wash thoroughly, then fillet the meat and remove the bones; reserve the head and tail.
Marinate the fish
Pat the fish dry, score a diamond pattern on the surface, and cut into pieces. Add the seasonings (salt, ginger juice, cooking wine, scallion segments), mix well, and marinate for 30 minutes.
Coat and first fry
Mix the batter ingredients (cornstarch, egg white). Coat the fish pieces with the batter, then roll them in the sesame seeds. Deep-fry in hot oil (about 50% heat) for 3 minutes, then remove and drain.
Refry and plate
Reheat the oil until very hot, return the fish, and fry again until golden brown. Coat the head and tail with batter as well, fry until cooked through, and arrange on either side of the fish to serve.
