Sesame Paste Bun

Ingredients

flour 300 g
sugar 1/3 cup
baking powder 2 tsp
rendered lard 1/2 tbsp
water 1/2 cup
sesame paste 1/4 cup
cooked glutinous rice flour 1/4 cup
sugar (for filling) 1/2 cup
rendered lard (solidified, for filling) 2 tbsp

Instructions

1

Dough mixing and fermentation

Mix flour, baking powder, and sugar thoroughly, sift twice, add lard and knead. Add water in multiple batches, kneading as you add until the dough is soft. Cover with a damp cloth and let ferment for about 20 minutes. Mix all filling ingredients evenly and divide into 16 portions.

2

Wrapping and steaming

Knead the dough portions evenly, divide into 16 pieces, flatten each on a work surface into a wrapper that is thin at the edges and slightly thicker in the center. Place the sesame paste filling in the center of the wrapper, gather the edges and pinch tightly to seal. Place a piece of white paper under the base of each bun, arrange them in a steamer basket, and steam over high heat for 15 minutes until cooked through (steaming time will be longer on a standard home stove). Serve immediately while hot.
