Sesame Paste Buns

Ingredients

flour 300 g
sugar (for dough) 1/3 cup
baking powder 2 tsp
cooked lard (for dough) 1/2 tbsp
water 1/2 cup
sesame paste (for filling) 1/4 cup
cooked glutinous rice flour (for filling) 1/4 cup
sugar (for filling) 1/2 cup
cooked lard, solidified (for filling) 2 tbsp

Instructions

1

Mixing and Fermenting the Dough

Combine the flour, baking powder, and sugar, then sift twice. Rub in the lard and gradually add water, kneading as you go until the dough is soft. Cover with a damp cloth and let it ferment for about 20 minutes.

2

Preparing the Filling

Stir all of the filling ingredients together until evenly combined, then divide the mixture into 16 portions.

3

Shaping the Buns

Knead the dough until smooth and divide it into 16 portions. Flatten each piece on a work surface so the edges are thin and the center is slightly thicker. Place a portion of the sesame filling in the middle, then lift the edges of the dough and pinch them together into tight pleats to seal the bun closed.

4

Steaming

Place a small square of parchment paper under each bun, arrange them in a steamer over boiling water, and steam over high heat for 15 minutes until cooked through (home stoves may need a longer steaming time). Serve hot.
