Sesame Rabbit
Boil the rabbit meat until it is 70% cooked, then braise it. Cut the braised meat into chunks, drizzle with a sesame oil dressing, and sprinkle with toasted black sesame seeds. The finished dish has tender, soft meat and a rich, nutty sesame aroma.

Prepare Ingredients
Wash the black sesame seeds thoroughly and toast them until fragrant. Slaughter the rabbit, remove the skin and paws, eviscerate it, and wash it clean.
Boil the Rabbit
Place the rabbit in a pot, add an appropriate amount of water, bring to a boil, and skim off the foam. Add the ginger slices, scallion segments, Sichuan peppercorns, and salt. Cook until about 70% done, then remove and let cool slightly.
Braise
Place the rabbit in the braising liquid pot and braise over the fire for about 1 hour. Remove and let cool.
Slice and Plate
Cut the rabbit meat into pieces and arrange on a serving plate. Mix the MSG and sesame oil together, drizzle over the plate, sprinkle with the toasted black sesame seeds, and toss well before serving.
