Mix the dough
Combine flour, yeast, sugar, and salt in a large bowl. Pour in warm milk and mix until a shaggy dough forms. Add softened butter and knead for 8-10 minutes until smooth and elastic.
First rise
Shape the dough into a ball and place in a lightly oiled bowl. Cover with plastic wrap and let rise at room temperature for about 1 hour, or until doubled in size.
Shape the rolls
Punch down the dough and divide into 8 equal pieces (about 60g each). Roll each piece into a ball, cover, and let rest for 10-20 minutes.
Final shaping
Flatten each ball and roll into an oval or triangular shape. Roll up tightly and seal the seam. Place seam-side down on a lined baking sheet.
Second rise
Cover the shaped rolls and let them rise in a warm, humid environment (around 28°C/82°F with 70% humidity) for about 40 minutes until puffy.
Add toppings and bake
Brush each roll with egg wash, then generously sprinkle with sesame seeds and flaky sea salt. Bake at 180°C/350°F for 18-20 minutes until golden brown. Let cool slightly before serving.
