Sesame Shrimp Balls
Korean-style fried shrimp balls. Shrimp is minced into a paste, shaped into balls, coated with sesame seeds and fried until golden. They have a fluffy, crisp exterior and tender interior, with a rich, fragrant, lightly oily flavor.
Ingredients
Instructions
Make shrimp paste
Soak the shrimp, rinse thoroughly, and mince into a smooth paste. Transfer the paste to a porcelain bowl, add cooking wine, MSG, sesame seeds, starch, egg white, and salt, stir until well combined to form a shrimp paste, then squeeze into small round shrimp balls by hand.
Fry
Heat a wok and add peanut oil. When the oil reaches approximately 40% of its smoking point, turn off the heat, then add the shrimp balls one by one. Once all shrimp balls are in the wok, turn the heat up to high, use a slotted spoon to continuously turn the shrimp balls, fry until they are golden brown, then remove with the slotted spoon and drain excess oil.
Serve
When serving, arrange the sesame shrimp balls on a plate, and serve with a small dish of chili sauce for dipping.
