Shandong Fried Sauce Noodles

Ingredients

flour (for 5 bowls) 500 g
pickled cucumber (diced) 40 g
soy sauce 15 g
scallion and ginger (finely chopped) 10 g
peanut oil 50 g
lean pork (small diced) 125 g
sweet bean sauce 25 g
Shaoxing wine 2 g
Sichuan pepper oil 3 g

Instructions

1

Make dough and noodles

Put the flour in a bowl, add an appropriate amount of water and knead into a smooth dough. Shape into noodles, cook in boiling water until done, drain, and divide among 5 bowls.

2

Stir-fry the sauce

Dice the pork and the pickled cucumber. Place a wok over the heat, add the peanut oil, and once hot, add the scallion and ginger and fry until fragrant. Add the pork and stir-fry until it turns white, then add the sweet bean sauce and stir-fry briefly. Add the pickled cucumber, soy sauce, and Shaoxing wine. Once it comes to a boil, drizzle in the Sichuan pepper oil, then ladle into bowls as the fried sauce topping.
