Pork hind leg meat (with skin), scrubbed clean, boiled, and shredded 500 g
Chinese toon buds, washed, blanched, stems removed, and finely chopped 100 g
Premium soy sauce 20 g
White sugar 15 g
Chili oil 10 g
Sesame oil 5 g
MSG (monosodium glutamate) 1 g
Fine salt 2 g
Mashed garlic 10 g

Instructions

1

Preparing the pork

Scrub the pork clean, place in a soup pot and boil until cooked, remove and soak in hot broth for 10 minutes, take out and pat dry, cut into thin strips about 6 cm long, and arrange on a plate.

2

Preparing the toon

Wash the toon buds, place them in a bowl, steep briefly with boiling water, then remove and pull off the stem ends. Cut the buds into fine pieces.

3

Seasoning and plating

Combine the soy sauce, sugar, chili oil, sesame oil, MSG, garlic paste, and fine salt in a bowl and mix well into a sauce. Pour the sauce over the pork shreds, sprinkle the chopped toon on top, and serve.
