soy sauce 25 g
scallion whites (cut lengthwise into strips and rinsed in cold water) 150 g
sugar 15 g
vegetable oil 200 g
cooking wine 15 g
sweet bean sauce 50 g
MSG 1 g
Sichuan salt 3 g
water starch slurry 20 g

Ingredient Preparation

Cut the pork into 5 cm long shreds. On a sanitized cutting board, cut the scallion whites lengthwise into 5 cm fine strips, rinse briefly with cold water, and arrange on a plate.

Marinating the Pork

Combine the pork shreds with soy sauce, salt, and cooking wine, mixing evenly. Coat with the water starch slurry and set aside.

Stir-Frying

Heat the wok and add the vegetable oil. Once the oil is hot, add the pork shreds and stir-fry quickly with a spatula. When the pork is just cooked, add the cooking wine, sweet bean sauce, soy sauce, and sugar, and stir-fry until fragrant and well-colored. Add the MSG and toss to combine. Transfer the pork onto the plate, laying it on top of the scallion shreds. Mix together at the table before eating.
