Sichuan-style Bang Bang Chicken

Cooked rooster breast (remove skin, debone, pound loose and shred into threads)

Cooked rooster thigh meat (remove skin, debone, pound loose and shred into threads)

White scallion segments (cut into fine threads)

Step 1
Remove the skin and bones from the chicken breast and thigh meat. Place the chicken on a cutting board, gently pound it loose with a small rolling pin, then shred it into thin threads. Cut the white scallion segments into fine threads and sprinkle them over the shredded chicken. Set aside.

In a small bowl, combine the sesame paste, soy sauce, sugar, MSG, Sichuan peppercorn powder, aromatic sesame oil, and red chili oil to make a sesame-chili sauce. Set aside.

When serving, drizzle the sauce over the shredded chicken.
