Sichuan-Style Pork and Celtuce Stir-Fry

Ingredients

pork (washed, sliced, and mixed with a marinade of salt, cooking wine, and cornstarch slurry) 160 g
celtuce (washed and cut into diamond-shaped slices) 160 g
ginger slices 10 g
garlic slices 10 g
pickled chili segments 20 g
salt 1 g
pepper 1 g
stock 25 g
cornstarch slurry 15 g
cooking wine 5 g

Prepare the ingredients

Wash the pork and cut it into thin slices, then mix well with a marinade of salt, cooking wine, and cornstarch slurry. Wash the celtuce and cut it into diamond-shaped slices.

Stir-fry the aromatics and pork

Heat oil in a wok over high heat. Add the garlic slices, ginger slices, and pickled chili segments and stir-fry until fragrant. Add the marinated pork and the stock, and continue stir-frying until the pork is nearly cooked through.

Finish and serve

Add the celtuce slices, sesame oil, and pepper, and stir-fry until everything is cooked through and the sauce has reduced. Serve immediately.
