Steamed egg custard is a comfort food staple in many Chinese households. The secret to its signature silkiness lies in the water-to-egg ratio and straining the mixture to remove air bubbles. By greasing the bowl beforehand, cleanup becomes effortless.

Ingredients

Fresh shrimp 6-8 pieces
Large eggs 2
Warm water or chicken stock 1 cup
Salt 1/4 tsp
Chicken powder or white pepper 1 pinch
Sesame oil 1 tsp

Prep the Shrimp and Eggs

Peel and devein the shrimp, then set aside. Crack the eggs into a mixing bowl.

Mix the Base

Beat the eggs gently with a pinch of salt and chicken powder. Gradually whisk in the warm water (or stock) using a 2:1 liquid-to-egg ratio. Stir in one direction until combined.

Strain and Pour

Pour the mixture through a fine-mesh sieve into another bowl to remove lumps and foam. Lightly grease your steaming bowl with sesame oil, then pour the strained egg liquid in, filling it about 90% full.

Cover the bowl with a plate or a lid. Place it in a steamer over boiling water and cook for about 12-15 minutes until just set. Serve warm.
