Simple Cranberry Caramel Muffin Cake

Story

These simple cranberry caramel muffin cakes are a delightful treat for any occasion. Combining the tartness of cranberries with the rich, buttery sweetness of caramel, this quick baking recipe is guaranteed to become a new household favorite.

Ingredients

cake flour 100g
milk 80g
vegetable oil 30g
dried cranberries 40g
sugar 30g
baking powder 6g
salt 1.25g
egg 20g

Instructions

1

Step 1

Pour the milk into a bowl, add the vegetable oil

2

Step 2

Add the beaten egg liquid, stir evenly

3

Step 3

Mix the flour and baking powder evenly, then sift

4

Step 4

Mix the flour, baking powder, salt, sugar, and dried cranberries evenly

5

Step 5

Pour the mixed flour into the mixed egg liquid.

6

Step 6

Stir until even. At this time, the batter will look rough and lumpy, but do not continue to stir. This is to avoid gluten development in the flour which causes a coarse texture. Immediately pour into molds, filling 2/3 full. You can garnish the top with some cranberries.

7

Step 7

Place into a baking pan, and put into the preheated oven to bake.

8

Step 8

After taking it out of the oven at 15 minutes, drizzle with caramel

9

Step 9

Make the caramel: 50g of granulated sugar + 15g of water. Simmer slowly over low heat, do not stir. Wait until it bubbles and turns yellow, then remove from heat and drizzle over the muffins.

10

Step 10

Wait until the caramel cools before eating to avoid burning your mouth.

11

Step 11

Once cooled, the caramel is crispy while the inside is soft. When you bite into the cranberries, they are tart, creating a rich texture with a sweet and sour flavor profile.
