Beat the eggs
Crack the eggs into a small bowl and add a splash of water. Whisk until well combined and slightly frothy.
Heat the oil and cook eggs
Heat oil in a wok or large skillet over medium-high heat until shimmering. Pour in the beaten eggs and let them set for a moment, then gently stir until soft curds form. Remove and set aside.
Stir-fry the vegetables
Add a little more oil if needed, then toss in the diced carrots. Stir-fry for about 2 minutes until they start to soften. Add the green peas and continue cooking for another minute.
Combine and season
