Set up your ingredients
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. Separate the egg yolks from the whites—this is easier when eggs are cold.
Mix the dry ingredients
In a large bowl, whisk together the flour, baking powder, and a pinch of salt. Set aside.
Create the yolk mixture
In another bowl, beat the egg yolks with 1/2 cup of sugar until pale and creamy. Stir in the softened lard and milk until smooth. Gradually fold in the dry ingredients until just combined—don't overmix.
Whip the egg whites
Using clean, dry beaters, beat the egg whites with the remaining 1/4 cup of sugar and a tiny pinch of salt. Beat until you get soft, fluffy peaks that hold their shape but aren't stiff.
Combine and bake
Gently fold the whipped egg whites into the batter in three additions—be careful not to deflate the air. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
Cool and serve
