Sizzling Bacon and Sugar Snap Peas
A quick and vibrant stir-fry featuring crispy smoked bacon paired with crisp-tender sugar snap peas. The perfect balance of salty and sweet flavors makes this an ideal side dish for any weeknight dinner.
Story
This dish relies on the contrast between the rich, savory crunch of bacon and the fresh snap of green peas. Blanching the peas beforehand ensures they stay bright green and cook perfectly in the pan.
Ingredients
Instructions
Blanch the Peas
Bring a pot of water to a boil. Add a pinch of salt and a few drops of oil to the water. Toss in the sugar snap peas and blanch for about a minute until they turn bright green. Drain immediately and plunge them into a bowl of ice water to stop the cooking and keep them crisp.
Prep the Bacon
While the peas cool, slice the bacon strips into small, bite-sized pieces.
Sear the Bacon
Place a wok or frying pan over medium heat. Add the bacon pieces and fry them until the fat renders out and the edges become golden and crispy.
Toss and Serve
Drain the cooled peas thoroughly and add them to the pan with the bacon. Stir-fry quickly for just 1-2 minutes to combine the flavors and heat the peas through. Serve hot.
