Snow Mountain Crystal Shrimp
A Fujian specialty: shrimp are briefly fried, then wrapped in whipped egg whites and deep-fried until lightly golden, shaped like a snow mountain.

Prepare the ingredients
Mix a small amount of egg white with the water chestnut starch, add the shrimp and toss to coat; finely chop the ham and cilantro.
Quick-fry in oil
Heat the lard (300g) in a wok over low heat, add the shrimp and stir-fry until just cooked, then remove and let cool.
Shape and deep-fry
Beat the remaining egg whites until they form stiff peaks that hold their shape, then fold in a little water chestnut starch. Spread half of the beaten egg whites on a plate, place the cooked shrimp on top, then cover with the remaining egg whites, shaping it into a snow mountain. Sprinkle some chopped ham and cilantro on top as garnish. Place into a wok of clean hot lard over low heat and fry, spooning the hot lard over the top continuously, until the egg whites turn a pale golden color.
