Ingredients

Snow peas, trimmed 200g
Button mushrooms, sliced 150g
Garlic, minced 2 cloves
Vegetable oil 2 tablespoons
Salt to taste
Light soy sauce 1 teaspoon
Sesame oil a drizzle

Prepare the vegetables

Trim the ends off the snow peas and give them a quick rinse. Slice the mushrooms evenly so they cook at the same rate.

Blanch the snow peas

Bring a pot of salted water to a gentle boil. Drop in the snow peas and cook for just 30 seconds until they turn bright green and slightly tender. Drain immediately and rinse with cold water to stop the cooking.

Stir-fry the mushrooms

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the sliced mushrooms and stir-fry for 2-3 minutes until they release their moisture and start to golden.
