Snowman Cake
A playful sponge cake decorated with whipped cream, raisins, and strawberry snowmen.
Story
This light sponge cake is finished with whipped cream and simple strawberry snowman decorations. Raisins are folded into the batter for extra sweetness, and the finished cakes are assembled as a festive homemade dessert.

Step 1
Prepare all of the ingredients.
Step 2
Soak the raisins, then wipe off the surface moisture.
Step 3
Add 30g sugar to the egg yolks.
Step 4
Beat until pale and about doubled in volume.
Step 5
Add a few drops of white vinegar to the egg whites and beat on low speed until coarse bubbles form.
Step 6
Add 15g sugar in three additions, then beat on high speed until glossy peaks form with a small hook at the tip.
Step 7
Fold one third of the whipped egg whites into the yolk mixture.
Step 8
Mix evenly with a spatula.
Step 9
Add the remaining egg whites and fold gently from the bottom, then sift in the cake flour.
Step 10
Add a little cake flour to the raisins and toss evenly.
Step 11
Add the raisins to the batter and fold into a smooth batter.
Step 12
Spoon the batter into molds lined with cake paper.
Step 13
Preheat the oven to 160C with top and bottom heat. Bake for 20 minutes, then cool the cakes on a rack.
Step 14
Whip the heavy cream with sugar.
Step 15
Transfer the whipped cream to a piping bag and pipe it onto the cakes.
Step 16
Shape the strawberries into little snowmen and place them on top of the cakes.
