Soft Fried Shrimp
Shrimp, marinated in alkaline water, starch-coated, and quickly cooked through, is stir-fried with a pre-mixed bowl sauce and plated with pea shoots as a border. A Beijing-style dish.

Marinate the shrimp with a pinch of alkaline powder, then rinse off the alkali with water, pat dry with a clean kitchen towel, coat with salt, black pepper, egg white, and dry starch, par-fry until cooked, then drain off the oil.

Leave a little base oil in the wok, add minced scallion and ginger, stir-fry the shrimp briefly, pour in the pre-made sauce (mixed with water starch, salt, black pepper, and broth), stir-fry to combine and transfer to a plate, stir-fry the pea shoots and arrange around the shrimp to serve.
