Mix the Dough
Combine bread flour, glutinous rice flour, yeast, sugar, and salt in a large bowl. Pour in the milk and mix until a shaggy dough forms. Turn onto a floured surface and knead for about 8 minutes until smooth and elastic.
Add the Butter
Flatten the dough, add the butter in pieces, and continue kneading until the butter is fully incorporated and the dough becomes smooth and silky. This should take another 5-7 minutes.
First Rise
Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm spot until doubled in size. This typically takes 60-90 minutes depending on room temperature.
Shape the Loaf
Gently punch down the dough to release air. Divide in half, round each piece into a ball, and let rest for 15 minutes. Roll each ball into an oval rectangle, then roll up tightly like a jelly roll. Place in a greased loaf pan.
Second Rise and Bake
Cover and let rise again until the dough crowns above the pan, about 30 minutes. Preheat oven to 180°C (350°F). Bake for 20-25 minutes until golden brown on top. Remove from pan and cool on a wire rack.
