Sour and Spicy Shrimp Omelette
A Cantonese dish featuring marinated shrimp served with baked egg, finished with a sweet-sour and spicy sauce.
Ingredients
Shrimp (deveined, cleaned, patted dry, mixed with marinade and marinated for 20 minutes)

Small onion (cut into strips)

Eggs (mixed well with seasoning)

Sour and spicy sauce

Step 1
Devein the shrimp, rinse and pat dry, mix with the marinade and marinate for 20 minutes. Cut the onion into strips, cut the scallion into segments, mince the garlic, and mix the eggs thoroughly with the seasoning.

Step 2
Heat 2 tbsp of oil, pour in the egg mixture and stir-fry until set, then reduce heat to medium-low and cook until both sides are golden brown, then transfer to a serving plate.

Heat another 2 tbsp of oil, stir-fry the shrimp until cooked through, add the onion, garlic and scallion and stir-fry until fragrant, then add the sauce mixture and bring to a boil, then pour over the egg base and serve.
