Soy-Braised Yellow Croaker

Ingredients

Yellow croaker (scaled, gutted, gills removed, washed, several diagonal cuts made on both sides of the fish body) 1000 g
diced pork 50 g
mushrooms 25 g
soybean oil 250 g (actual consumption 60 g)
white sugar 100 g
cooking wine 25 g
vinegar 75 g
soy sauce 25 g
MSG 5 g
minced scallion 20 g
chicken broth 500 ml
sesame oil 10 g
minced ginger 15 g
sliced garlic 10 g
fine salt (for marinating) 7.5 g
Sichuan pepper powder 1 g
chili powder 2 g
soybean paste 10 g

Instructions

Marinate the Fish

Wash the yellow croaker, remove scales, internal organs and gills, wash again, make several diagonal cuts on both sides of the fish body, put into a ceramic bowl, rub salt, Sichuan pepper powder, minced scallion and minced ginger all over the inside and outside of the fish, marinate for 2 hours, remove scallion, ginger and Sichuan pepper powder, drain, set aside.

Fry the Fish

Heat the wok, pour in 250 g soybean oil, heat to 70% of full heat, add the yellow croaker, when the fish skin is slightly hardened, remove, drain oil, set aside.

Braise with Sauce

Leave 35 g of base oil in the wok, heat up, add diced pork and mushrooms, stir-fry briefly, then add soybean paste, stir-fry a few more times, add minced scallion, minced ginger, sliced garlic, cooking wine, soy sauce, vinegar, white sugar, chicken broth and chili powder, when the soup comes to a boil, add the yellow croaker, turn the heat to low and simmer for about 30 minutes. When the sauce thickens, turn to high heat to reduce the sauce, drizzle with sesame oil, and the dish is ready.
