Onion (peeled, chopped)

Olive oil 2 tbsp
White wine
Chicken stock (or fish stock)
Salt 1/4 tsp
White pepper a pinch
Fresh basil, chopped

Instructions

1

Preheat oven

Preheat the oven to 185°C (top and bottom heating).

2

Prepare ingredients

Wash the white rice and drain; trim the antennae off the prawns, devein and wash them; wash the scallops; wash the squid and cut into rings; soak the clams in water to purge sand; wash the boneless chicken thigh and cut into small chunks; cut the bacon into small slices; seed, wash and cut the red and yellow bell peppers into large dice; wash and slice the mushrooms; stem, wash and cut the tomatoes into small chunks; peel and chop the onion and garlic; set aside.

3

Stir-fry ingredients

Take a deep frying pan, add 2 tbsp olive oil and heat over medium heat. Add the bacon slices and chicken thigh chunks, stir-fry over high heat until the chicken turns white. Then add the chopped onion and minced garlic and stir-fry until fragrant. Add the remaining ingredients and stir-fry evenly, then add the white rice and stir-fry until the rice releases a fragrant aroma.

4

Add stock and bake

Next add the white wine and cook until the alcohol evaporates. Pour in half of the chicken stock, cook until the liquid is mostly absorbed, then add the remaining chicken stock. Season with salt and white pepper. Arrange the prawns neatly on top of the cooked rice mixture, cover the pan with a lid, and bake in the preheated oven for about 15 minutes. Remove from the oven, serve on a plate, and sprinkle with chopped fresh basil.
