Spicy Cheeseburger Soup
A rich, American-style cheeseburger soup with a kick of cayenne pepper.

milk (divided)

all-purpose flour

processed American cheese (cubed)

bacon (cooked and crumbled)

Cook the vegetables
In a large pot, combine the first nine ingredients; bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.

Add meat and milk
Stir in the beef and 2 cups of milk; heat through. In a small bowl, whisk the flour and remaining milk until smooth; gradually stir the mixture into the soup. Bring to a boil; cook for 2 minutes, or until thickened and bubbly.

Reduce heat to low; stir in the cheese until melted. Add cayenne pepper if desired. Sprinkle with bacon before serving.
