Spicy Stir-Fried Shredded Pork

Ingredients

pork leg lean meat (cut into 3 cm long, 5 mm wide, 5 mm thick shreds) 300 g
soybean oil 75 g
dried chili peppers (wiped clean, cut into long shreds) 3
fine salt 20 g
soy sauce 15 g
scallion (peeled, washed, cut into long shreds) 20 g
ginger (peeled, washed, cut into fine shreds) 10 g
garlic (peeled, washed, cut into short shreds) 10 g
cooking wine 15 g
sesame oil 15 g
MSG 1 g
ground white pepper 1 g

Instructions

Cutting the Pork Shreds

Wash the pork, trim away all fascia, and cut into 3 cm long, 5 mm wide, 5 mm thick shreds. Soak in clean water, then remove and drain. Wipe the dried chilies clean and cut into long shreds.

Preparing the Ingredients

Peel and wash the scallion and cut into long shreds. Peel and wash the ginger and cut into fine shreds. Peel and wash the garlic and cut into short shreds. Set aside.

Frying the Chili Shreds

Heat the wok and add the soybean oil. When the oil is roughly four-tenths hot, add the chili shreds and fry until they change color, then remove and set aside.

Stir-Frying the Pork Shreds

Mix the pork shreds evenly with the salt and ground white pepper. Place them into the oil and stir-fry until the pork shreds turn a deep yellow. Add the dried chili shreds, ginger shreds, and garlic shreds and briefly stir-fry. Add the soy sauce, add the scallion shreds, drizzle with sesame oil, add the MSG, stir-fry evenly, and serve.
