Spicy Tomato Catfish

Spicy Tomato Catfish

Ingredients

catfish fillet (about 0.5 lb) 1 slices
salt 1/4 tsp
ground black pepper 1/8 tsp
cayenne pepper a pinch to 1/8 tsp
Mexican diced tomatoes (canned, with juice) 1 cup
green onions (thinly sliced) 1-2
cooked rice (white or brown) to taste

Step 1

Sprinkle the fish with salt, pepper, and cayenne pepper. Pan-fry the fish in a nonstick skillet over medium heat for about 3 minutes per side until lightly browned. Top with tomatoes and sprinkle with green onions. Bring to a boil. Reduce the heat to low and simmer, uncovered, for about 2 minutes.

Cover and cook for another 2-3 minutes, until the sauce has thickened and the fish flakes easily with a fork. Serve with rice if desired.
