Spinach with Glass Noodles
Tender, flavorful, and refreshingly cool—a classic homestyle cold dish.
Ingredients
spinach (yellow leaves removed, roots trimmed, washed, blanched, cooled, cut into sections)
300 g
glass noodles (soaked until soft, cooled, cut into long sections)
100 g
dried shrimp (soaked in hot water)
15 g
chili oil
20 g
mustard powder (mixed with hot water and covered)
15 g
soy sauce (original text incomplete)

garlic (minced)

Step 1
Pick the yellow leaves off the spinach, cut off the roots, and wash thoroughly in clean water. Drop into a pot of boiling water to blanch briefly, then quickly remove and transfer to cold water to cool. Squeeze out the excess water and cut into 3 cm sections.

Step 2
Soak the glass noodles in boiling water until fully softened, rinse in cold water to cool, then cut into 15 cm long sections and arrange on a plate. Soak the dried shrimp in hot water until rehydrated. Mix a small amount of mustard powder with hot water and cover to steep. Mince the garlic and set aside.
