A Korean-style cold salad featuring squid scored in a crosshatch pattern and blanched, then tossed with fried green peppers and scallion segments in a soy sauce and sugar dressing. Colorful, tender, and flavorful.

Squid Salad

Ingredients

Cleaned squid (washed clean, scored with a crosshatch pattern 2 mm wide reaching 2/3 of the squid's depth, then cut into 1 cm cubes) 500 g
Sweet green peppers (washed, stems and seeds removed, cut into 1 cm cubes, fried in hot oil until fragrant) 250 g
Green onions (peeled, washed, cut into 1 cm segments, fried in hot oil until fragrant) 250 g
White sugar 50 g
Soy sauce (combined with sugar and MSG, simmered over low heat into a thick sauce) 100 g
Sesame oil (used for frying the green peppers and onion segments) 75 g
MSG 25 g
Sesame seeds (toasted, sprinkled on when serving) 5 g

Prepare the squid

Wash the cleaned squid thoroughly, score a crosshatch pattern 2 mm wide and 2/3 the depth of the squid, then cut into 1 cm cubes. Blanch in a pot of boiling water until tender and crisp.

Prepare the vegetables

Wash the sweet green peppers, remove the stems and seeds, and cut into 1 cm cubes. Peel and wash the green onions, then cut into 1 cm segments. Fry the peppers and onions separately in hot oil until fragrant.

Make the sauce and toss

Combine the soy sauce with the sugar and MSG and simmer over low heat into a thick sauce. To serve, toss the squid cubes, fried onion segments, and fried pepper cubes together with the thickened soy sauce, transfer to a plate, and sprinkle with sesame seeds.
