Steamed Black Pomfret with Lemon

Ingredients

Black pomfret (scaled and gutted, with black membrane in the belly scraped away) 1 (about 500g)
Lemon (sliced and juiced) 3
Garlic cloves (minced) 2
Celery (leaves removed, finely diced) a pinch
Red pepper shreds a pinch
Coriander (roots removed, washed, broken into small sprigs) 1
Soy sauce 2 tsp
Sugar (must be mixed until fully dissolved) 1 tsp
Pepper powder a pinch

Instructions

1

Prepare the ingredients

Slice and juice the lemons (you should get about 1 tsp of juice). Mince the garlic. Remove the celery leaves and finely dice the stalks. Trim the roots off the coriander, wash it, and break it into small sprigs. Combine the lemon juice with the soy sauce, sugar, and pepper, stirring until the sugar is fully dissolved.

2

Prepare the fish

Scale and gut the fish, scraping off the black membrane inside the belly. Coat the fish evenly with the prepared marinade, place it on an oiled plate, and arrange the lemon slices on top of the fish.

3

Steam

Bring the steamer water to a rolling boil, put the plate in, and steam over high heat for 9 minutes. Discard the liquid that pools on the plate.

4

Finish and serve

While still hot, scatter the celery and coriander over the fish, then drizzle with smoking-hot oil and a little light soy sauce. Serve right away.
