Steamed Chicken with Red Wolfberries

Ingredients

Young hen (slaughtered and cleaned) One (about 1500g)
Wolfberries (washed, stuffed into the cavity) 15g
Cooking wine 10g
Pepper powder (original text OCR error) 3g
Ginger (cut into large slices) 10g
Scallion (cut into sections) 10g
MSG 1g
Salt 3g
Clear broth 150g

Prepare the Ingredients

After slaughtering the chicken, remove the feathers, internal organs, and feet, then wash it clean. Rinse the wolfberries, cut the ginger into large slices, and cut the scallions into sections for later use.

Blanch and Stuff

Blanch the chicken in boiling water until cooked through, remove it and rinse with cold water, then drain off the moisture. Stuff the wolfberries into the chicken's cavity through the vent opening.

Steam

Then place the chicken breast-up in a bowl, add ginger, scallion, pepper powder, cooking wine, and salt, pour in the clear broth, seal the opening with warm cotton paper, and steam over high heat for 2 hours until the chicken is tender. Remove from the steamer, discard the ginger and scallion, add MSG, and it is ready to serve.
