Steamed Pork Ribs with Black Bean Sauce
Steamed ribs infused with a rich black bean aroma, tender and full of savory flavor.

Pork ribs (boned with extra lean meat, cut into strips and chopped into chunks, washed and dried)

Garlic (peeled and minced into paste)
2 cloves
Fermented black bean paste (fermented black beans chopped into paste)

Fine salt
1 tsp
MSG
1.5 tsp
Sugar
3 tsp
Dark soy sauce
3 tsp
Light soy sauce
3 tsp
Dry cornstarch
0.5 tbsp
Peanut oil

Step 1: Prepare the ribs and aromatics
Bone the pork ribs (keeping extra lean meat attached), wash well, first cut into strips, then chop into 2.5 cm chunks, wash again and pat dry. Peel the garlic and mince into a paste; chop the fermented black beans into a paste.

Step 2: Marinate the ribs
Combine the garlic paste, fermented black bean paste, sugar, fine salt, MSG, light soy sauce, and dark soy sauce in a bowl. Add the pork ribs and mix thoroughly until evenly coated. Set aside to marinate.

Step 3: Arrange for steaming
Transfer the marinated ribs into a steaming bowl, toss with the dry cornstarch, then arrange the ribs neatly on a plate and drizzle the peanut oil over the top. Steam until the ribs are tender and cooked through.
