Steamed Soft-Shelled Turtle

Prepare the Soft-Shelled Turtle
After slaughtering the live soft-shelled turtle and draining its blood, remove the gall bladder, wash thoroughly, chop into chunks, blanch in a pot with scallion, ginger, and cooking wine until cooked through, remove and soak in cold water, wash again, and drain.
Prepare the Accompaniments
Slice the canned bamboo shoots and ginger, cut the scallion into small segments, remove tendons from the chicken meat, mince into paste, and soak in 500 ml of chicken stock.
Steam
Place the soft-shelled turtle, scallion, ginger, and cooking wine in a steamer and steam until the meat falls off the bone. Remove, debone, and place in a bowl. Neatly arrange the sand-free soaked dried pine mushroom and bamboo shoots on top, then add scallion, ginger, salt, white pepper powder, cooking wine, and chicken stock. Place the bowl in a pot and steam over high heat until tender, then remove.
Prepare the Soup
Pour the steamed soft-shelled turtle broth into a small pot and heat. Add the minced chicken stock mixture, stirring gently. When the minced chicken floats and coagulates, scoop it out with a fine-mesh strainer. Pour the remaining soup into the bowl with the soft-shelled turtle, and the dish is ready.
