Ingredients

Soft tofu 300g
Shrimp 100g
Dried shiitake mushrooms 3 pieces
Egg 1 large
Cooking wine 1 tsp
Salt to taste
White pepper a pinch

Prepare the Base

Rehydrate the dried mushrooms in warm water until soft. Meanwhile, place the soft tofu in a bowl and mash it thoroughly with a fork or blend it until completely smooth.

Mix the Filling

Crack the egg into the mashed tofu and whisk until well combined. Dice the soaked mushrooms and the shrimp into small, even pieces. Fold these into the tofu mixture along with the cooking wine, salt, and white pepper. Stir everything together vigorously.

Steam the Custard

Pour the tofu mixture into a heat-proof bowl or shallow dish. Place the dish in a steamer over boiling water. Cover and steam on high heat for approximately 10 minutes, or until the center is set. Serve hot.
